Description

A delicious, cozy, and elegant Butternut Squash, Sage and Goat Cheese Flatbread: a crisp base with creamy, tangy cheese, caramelized squash, and a sweet maple finish. A perfect fall appetizer.

Ingredients

Scale
  • 1 pre-made flatbread or pizza dough (about 1012 inches)

  • 2 cups butternut squash, peeled and cut into small cubes

  • 2 tbsp olive oil, divided

  • Salt and freshly ground black pepper, to taste

  • 1 cup goat cheese, crumbled

  • 1 tbsp fresh sage leaves, chopped (plus extra for garnish)

  • 2 tbsp pure maple syrup

  • Red pepper flakes (optional, for garnish)

Instructions

  • Roast the Butternut Squash: Preheat the oven to 425°F (220°C). Toss the cubed butternut squash with 1 tbsp olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes until tender and caramelized, turning halfway through.

  • Prepare the Flatbread: Reduce oven temperature to 400°F (200°C). Place the flatbread on a parchment-lined baking sheet. Brush lightly with the remaining 1 tbsp olive oil.

  • Assemble the Flatbread: Evenly spread the roasted butternut squash over the flatbread. Sprinkle the crumbled goat cheese and chopped sage on top.

  • Bake: Bake in the oven for 10-12 minutes, or until the flatbread is crisp and the cheese is slightly melted and golden.

  • Finish with Maple Syrup: Remove the flatbread from the oven and drizzle the maple syrup evenly over the top. Garnish with extra fresh sage leaves and a pinch of red pepper flakes if desired.

  • Serve: Slice into casual pieces and serve warm.

Notes

  • Squash Cubes: Cut the butternut squash into small, uniform cubes (about 1/2-inch) to ensure even and quick roasting.

  • Flavor Infusion: Rubbing the chopped sage directly onto the squash and cheese helps release its aromatic oils and deepen the flavor.

  • Cheese Substitute: If you don’t like goat cheese, you can substitute it with crumbled feta or small dollops of creamy ricotta.

  • Serving Fresh: This flatbread is best served warm, as the warmth of the squash and crust makes the cheese soft and gooey.

  • Make Ahead: The butternut squash can be roasted and cubed a day ahead of time. Store it in the fridge and assemble/bake just before serving.
