Caramelized Onion and Cheese Tart

Delicious Caramelized Onion Tart with Gorgonzola and Brie: Your Elegant Appetizer

  • Author: New York Recipe
  • Total Time: 1 hour 5 minutes
  • Yield: 12 (as an appetizer) 1x
  • Diet: Vegetarian

Description

  • A delicious and elegant Caramelized Onion Tart with Gorgonzola and Brie: a flaky puff pastry tart with a rich filling of sweet caramelized onions, creamy Brie, and pungent blue cheese. A perfect, sophisticated appetizer.

Ingredients

Scale
  • 2 tablespoons extra virgin olive oil
  • 4 cups sliced onions (about 2 to 3 medium onions), sliced root-to-top into 1/4-inch thick slices
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces (1 sheet) frozen puff pastry, defrosted
  • 2 ounces chilled Brie cheese, rind removed and diced
  • 2 ounces Gorgonzola or other blue cheese, diced
  • 2 tablespoons chopped fresh tarragon (or fennel fronds)

Instructions

  • Caramelize the Onions: Heat the olive oil in a large deep pan over medium-high heat. Add the sliced onions and cook for about 10 minutes until they soften and begin to brown. Stir in the brown sugar, balsamic vinegar, salt, and pepper. Reduce the heat to medium-low and cook uncovered for 20 to 25 minutes, stirring occasionally, until the onions are deeply caramelized. If the onions start to dry out, add a splash of water. Once caramelized, let the onions cool slightly.
  • Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry into a 10-to-14-inch rectangle (or any shape you prefer). Place the pastry on a baking sheet lined with parchment paper. Prick the pastry all over with a fork to prevent large bubbles while baking.
  • Assemble the Tart: Evenly spread the cooled caramelized onions over the puff pastry, reaching all the edges. Dot the onions with pieces of Brie and Gorgonzola cheese. Sprinkle with chopped fresh tarragon (or fennel fronds).
  • Bake the Tart: Bake for 18 to 20 minutes, or until the puff pastry is golden brown and crispy, and the cheese is melted.
  • Serve: Remove from the oven and let the tart cool for about 5 minutes before slicing into squares or wedges. Serve warm as an appetizer, snack, or light lunch, paired with a simple arugula salad dressed in lemon vinaigrette.

Notes

  • Onion Caramelization: Patience is key! Cooking the onions slowly and stirring occasionally is the secret to achieving a deep, rich sweetness.
  • Puff Pastry Prep: Keep the puff pastry cold until you are ready to use it. This helps ensure it bakes into flaky layers.
  • Cheese Choice: For a more pronounced flavor, use a stronger Gorgonzola. For a milder one, a simple creamy blue cheese will work well.
  • Preventing a Soggy Crust: Ensure the caramelized onions have cooled completely before you spread them on the puff pastry.
  • Herb Freshness: Using fresh herbs like tarragon or fennel fronds adds a vibrant, aromatic finish that complements the rich flavors.
