Ingredients

2 3/4 cups all-purpose flour

1 cup butter, room temperature

3/4 cup granulated sugar

3/4 cup brown sugar

2 large eggs

1 1/2 cups finely grated carrots

2 tsp cinnamon

1 tsp baking soda

3/4 tsp salt

4 tbsp butter (for frosting)

2 oz cream cheese

3 cups powdered sugar
Instructions

Whisk flour, baking soda, salt, and cinnamon in a bowl.

Cream 1 cup butter with sugars for 3 minutes. Add eggs and vanilla.

Stir in grated carrots. Fold in dry ingredients until just combined.

Drop 2-tbsp scoops onto lined sheets. Bake at 350 F for 10-12 minutes. Cool.

Brown 4 tbsp butter in a pan. Mix with cream cheese, powdered sugar, and milk.

Frost cooled cookies and garnish with chopped nuts.

To ensure a soft cookie, do not overmix the dough once the flour is added.
