Instructions

Cook the eggs: Place eggs in boiling water and cook for 8 minutes 30 seconds. Remove, cool, and set aside.

Prepare the carrots: Peel the carrots using a vegetable peeler and make them into tagliatelle strips. Thinly slice the onion.

Toast the walnuts: In a dry skillet, toast the chopped walnuts with a small amount of butter for 10 minutes until golden. Remove and set aside.

Caramelize the carrots: In the same skillet, add the remaining butter, carrot tagliatelle, onion, garlic, salt, olive oil, and maple syrup. Cook over medium-high heat for about 12 minutes, stirring occasionally, until the carrots are slightly caramelized.

Prepare the green sauce: In a small saucepan, heat the cream with Parmesan, honey mustard, and pepper until the cream thickens slightly. In a blender, combine the cream mixture with coriander, basil, soft-boiled eggs, and lemon zest. Blend until smooth.

Serve: Plate the caramelized carrot tagliatelle. Pour the green sauce over the top while warm. Sprinkle with toasted walnuts for added crunch.
