Ingredients

  • 1 onion, thinly sliced

  • 1 tsp maple syrup

  • 1 ¼ cups cream

  • 3 tbsp Parmesan cheese

  • 1 tsp honey mustard

  • ¾ cup fresh coriander

  • ¾ cup fresh basil

  • 2 soft-boiled eggs

  • Zest of 1 lemon

  • Pepper, to taste


Instructions

  1. Cook the eggs: Place eggs in boiling water and cook for 8 minutes 30 seconds. Remove, cool, and set aside.

  2. Prepare the carrots: Peel the carrots using a vegetable peeler and make them into tagliatelle strips. Thinly slice the onion.

  3. Toast the walnuts: In a dry skillet, toast the chopped walnuts with a small amount of butter for 10 minutes until golden. Remove and set aside.

  4. Caramelize the carrots: In the same skillet, add the remaining butter, carrot tagliatelle, onion, garlic, salt, olive oil, and maple syrup. Cook over medium-high heat for about 12 minutes, stirring occasionally, until the carrots are slightly caramelized.
