A delicious, elegant Cheesy Shrimp Stuffed Salmon dish featuring flaky fillets filled with a creamy, garlicky mixture of sautéed shrimp and spinach. The perfect 45-minute gourmet seafood dinner.
Ingredients

4 salmon fillets (6 oz each)

16 medium shrimp, chopped

4 oz cream cheese, softened

1 cup fresh spinach, chopped

4 garlic cloves, minced

1/4 cup panko breadcrumbs

1 tbsp fresh parsley

2 tbsp butter or olive oil

Salt and black pepper
Instructions

Sauté garlic and shrimp in 1 tbsp butter until pink. Chop shrimp and wilt spinach in the same pan.

Mix shrimp, spinach, cream cheese, panko, and parsley in a bowl. Season with salt and pepper.

Slice a horizontal pocket into each salmon fillet. Season with salt.

Stuff the shrimp mixture into the pockets. Place on a baking sheet.

Dot with remaining butter and bake at 375°F for 20-25 minutes until the salmon is flaky.

Garnish with extra parsley and serve warm.
Notes

To prevent the salmon from drying out, ensure you don’t cut the pocket all the way through the back of the fillet.

If you want a bit of heat, add a pinch of red pepper flakes to the shrimp sauté.
