Ingredients

  • 4 salmon fillets (6 oz each)

  • 16 medium shrimp, chopped

  • 4 oz cream cheese, softened

  • 1 cup fresh spinach, chopped

  • 4 garlic cloves, minced

  • 1/4 cup panko breadcrumbs

  • 1 tbsp fresh parsley

  • 2 tbsp butter or olive oil

  • Salt and black pepper


Instructions

  1. Sauté garlic and shrimp in 1 tbsp butter until pink. Chop shrimp and wilt spinach in the same pan.

  2. Mix shrimp, spinach, cream cheese, panko, and parsley in a bowl. Season with salt and pepper.

  3. Slice a horizontal pocket into each salmon fillet. Season with salt.

  4. Stuff the shrimp mixture into the pockets. Place on a baking sheet.

  5. Dot with remaining butter and bake at 375°F for 20-25 minutes until the salmon is flaky.

  6. Garnish with extra parsley and serve warm.

Notes

  • To prevent the salmon from drying out, ensure you don’t cut the pocket all the way through the back of the fillet.

  • If you want a bit of heat, add a pinch of red pepper flakes to the shrimp sauté.

  • Serve this with roasted asparagus or a light lemon-quinoa salad for a complete artisanal meal.
