Description

Deliciously easy Chinese Zucchini Noodles: a quick, no-cook, low-carb meal featuring savory-spicy zucchini noodles coated in a rich, creamy tahini and coconut aminos sauce. Ready in 10 minutes (active prep).

Ingredients

Scale
  • 4 zucchinis, spiralized or cut into noodles
  • 1 teaspoon salt
  • 2 cloves garlic, finely chopped
  • 2 tablespoons coconut aminos
  • 2 tablespoons tahini (or peanut/almond butter)
  • 1 tablespoon sesame oil
  • 23 teaspoons chili powder
  • 2 teaspoons chili oil
  • 2 teaspoons honey or maple syrup
  • Toasted sesame seeds (optional)

Instructions

  1. Prep and Drain: Toss zucchini noodles with salt and place in a colander for 30 minutes.
  2. Make the Sauce: In a bowl, mix garlic, coconut aminos, tahini, sesame oil, chili powder, chili oil, and sweetener.
  3. Squeeze and Toss: Squeeze excess water from zucchini noodles and toss with the sauce.
  4. Garnish and Serve: Garnish with sesame seeds if desired. Serve immediately.

Notes

  • Draining: Do not skip the 30-minute salting and subsequent squeezing step. This prevents a watery sauce and ensures the noodles have a firm texture.
  • Consistency: If the sauce is too thick (especially if using peanut butter), add a splash of water or lime juice to reach your desired coating consistency.
  • Tofu Addition: For added protein, toss in cubed, pan-fried firm tofu or shredded cooked chicken before serving.
  • Gluten-Free: The recipe is naturally gluten-free when using coconut aminos or tamari instead of traditional soy sauce.
  • Serving Fresh: These noodles are best served immediately after tossing with the sauce for the crispiest texture.
