- 2 tablespoons coconut aminos
- 2 tablespoons tahini (or peanut/almond butter)
- 1 tablespoon sesame oil
- 2–3 teaspoons chili powder
- 2 teaspoons chili oil
- 2 teaspoons honey or maple syrup
- Toasted sesame seeds (optional)
Instructions
- Prep and Drain: Toss zucchini noodles with salt and place in a colander for 30 minutes.
- Make the Sauce: In a bowl, mix garlic, coconut aminos, tahini, sesame oil, chili powder, chili oil, and sweetener.
- Squeeze and Toss: Squeeze excess water from zucchini noodles and toss with the sauce.
- Garnish and Serve: Garnish with sesame seeds if desired. Serve immediately.
Notes
- Draining: Do not skip the 30-minute salting and subsequent squeezing step. This prevents a watery sauce and ensures the noodles have a firm texture.
- Consistency: If the sauce is too thick (especially if using peanut butter), add a splash of water or lime juice to reach your desired coating consistency.
- Tofu Addition: For added protein, toss in cubed, pan-fried firm tofu or shredded cooked chicken before serving.
