- ½ cup Ken’s Steakhouse Honey Mustard Dressing
- 1 tsp Sweet Baby Ray’s BBQ Sauce
- ½ tsp Apple Cider Vinegar For the Chicken Nuggets:
- 1 cup Dill Pickle Juice
- 1 lb Boneless Skinless Chicken Breasts, cut into 1-inch pieces
- 1 Egg
- 1 cup Milk
- 1½ cups All-Purpose Flour
- 3 tbsp Powdered Sugar
- 2 tsp Salt
- 1½ tsp Black Pepper
- ½ tsp Paprika
- Peanut Oil, for frying
Instructions
- Make the Sauce: In a small bowl, combine: ½ cup honey mustard dressing 1 tsp BBQ sauce ½ tsp apple cider vinegar Stir well and set aside in the fridge.
- Marinate the Chicken: Cut chicken into 1-inch pieces. Place chicken in a zip-top bag with 1 cup dill pickle juice. Seal and refrigerate for at least 4 hours.
- Prepare the Breading Station: In a large bowl, whisk together the egg and milk. Drain pickle juice from chicken and transfer pieces into egg mixture. Let sit while you prepare the dry mix.
- Coat the Chicken: In a zip-top bag or shallow dish, combine: 1½ cups flour 3 tbsp powdered sugar 2 tsp salt 1½ tsp pepper ½ tsp paprika Shake or mix to combine. Add drained chicken pieces and toss/shake until well coated.
- Fry the Nuggets: Heat peanut oil to 375°F (190°C) in a deep skillet or fryer. Fry chicken in batches for about 3–4 minutes until golden and cooked through. Transfer to a plate lined with paper towels to drain.
- Serve: Plate the nuggets in a deep creamy vintage dish with the dipping sauce on the side. Garnish with a touch of parsley or serve with fries, slaw, or your favorite side.
