  • 1 tsp Sweet Baby Ray’s BBQ Sauce
  • ½ tsp Apple Cider Vinegar For the Chicken Nuggets:

  • 1 lb Boneless Skinless Chicken Breasts, cut into 1-inch pieces
  • 1 Egg
  • 1 cup Milk
  • 1½ cups All-Purpose Flour
  • 3 tbsp Powdered Sugar
  • 2 tsp Salt
  • 1½ tsp Black Pepper
  • ½ tsp Paprika
  • Peanut Oil, for frying

Instructions

  • Make the Sauce: In a small bowl, combine: ½ cup honey mustard dressing 1 tsp BBQ sauce ½ tsp apple cider vinegar Stir well and set aside in the fridge.
  • Marinate the Chicken: Cut chicken into 1-inch pieces. Place chicken in a zip-top bag with 1 cup dill pickle juice. Seal and refrigerate for at least 4 hours.
  • Prepare the Breading Station: In a large bowl, whisk together the egg and milk. Drain pickle juice from chicken and transfer pieces into egg mixture. Let sit while you prepare the dry mix.
  • Coat the Chicken: In a zip-top bag or shallow dish, combine: 1½ cups flour 3 tbsp powdered sugar 2 tsp salt 1½ tsp pepper ½ tsp paprika Shake or mix to combine. Add drained chicken pieces and toss/shake until well coated.
  • Fry the Nuggets: Heat peanut oil to 375°F (190°C) in a deep skillet or fryer. Fry chicken in batches for about 3–4 minutes until golden and cooked through. Transfer to a plate lined with paper towels to drain.
