10 Corn Tortillas

1 pint cherry tomatoes, chopped

1 small cucumber, diced

1/4 bunch cilantro, chopped

2 scallions, chopped

1 serrano, chopped

1/2 lime, juiced

2 tbsp olive oil

2 avocados, mashed

2 tbsp sour cream

Prepare the Salmon: Mix honey, smoked paprika, chipotle powder, garlic powder, salt, and pepper. Place salmon on foil and brush mixture over the top. Grill for ~10 minutes, until charred and cooked through.

Make the Cucumber Tomato Salsa: Combine cherry tomatoes, cucumber, serrano, scallions, cilantro, lime juice, olive oil, and salt. Mix well.

Prepare the Avocado Crema: Mash the avocados and mix with sour cream and salt to taste.

Assemble the Tacos: Fill each tortilla with salmon, top with avocado crema and cucumber-tomato salsa. Serve immediately.
