  • 1/4 cup Honey

  • 1 tbsp Smoked Paprika

  • 2 tsp Chipotle Powder

  • 1 tsp Garlic Powder

  • 1 tsp Salt & Pepper

  • 10 Corn Tortillas

  • 1 pint cherry tomatoes, chopped

  • 1 small cucumber, diced

  • 1/4 bunch cilantro, chopped

  • 2 scallions, chopped

  • 1 serrano, chopped

  • 1/2 lime, juiced

  • 2 tbsp olive oil

  • 2 avocados, mashed

  • 2 tbsp sour cream

  • Salt to taste


Instructions

  1. Prepare the Salmon: Mix honey, smoked paprika, chipotle powder, garlic powder, salt, and pepper. Place salmon on foil and brush mixture over the top. Grill for ~10 minutes, until charred and cooked through.

  2. Make the Cucumber Tomato Salsa: Combine cherry tomatoes, cucumber, serrano, scallions, cilantro, lime juice, olive oil, and salt. Mix well.

  3. Prepare the Avocado Crema: Mash the avocados and mix with sour cream and salt to taste.

  4. Assemble the Tacos: Fill each tortilla with salmon, top with avocado crema and cucumber-tomato salsa. Serve immediately.
