Description

A delicious, high-protein Chicken Shawarma Salad: spiced marinated chicken, tangy pickled sumac onions, and crunchy romaine, all tossed in a creamy garlic yogurt sauce.


Ingredients

  • 1 tbsp olive oil & 1 tbsp yogurt

  • Spices: garlic powder, onion powder, paprika, cumin, turmeric, cinnamon, salt

  • 1 lemon, juiced (for marinade)

  • 2 heads romaine, shredded

  • 1/2 cup dill pickles, chopped

  • Handful of parsley

  • 1 red onion, lemon juice, sumac (for pickled onions)

  • Yogurt Sauce: Greek yogurt, mayo, lemon juice, garlic, olive oil, smoked paprika, cumin


Instructions

  1. Marinate: Combine chicken with spices, yogurt, and oil. Marinate for 2 hours.

  2. Cook: Bake at 400°F for 37-40 minutes. Rest and slice.

  3. Onions: Mix onions with lemon and sumac; let sit 5 mins.

  4. Sauce: Whisk or blend all sauce ingredients until smooth.

  5. Assemble: Toss salad base with onions, chicken, and sauce. Serve warm.

  • Marinating: Longer marinating time equals deeper flavor and more tender meat.

  • Extra Crunch: Add radishes or shredded cabbage if desired.
