Instructions
- Sear the Shrimp: Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper. Cook for 2–3 minutes per side until pink and cooked through. Remove and set aside.
- Create the Sauce: In the same skillet, reduce the heat slightly and sauté minced garlic for about 30 seconds until fragrant. Stir in sun-dried tomatoes and cook for 1 minute.
- Add Creaminess: Reduce heat to medium. Pour in heavy cream, then stir in Italian seasoning, red pepper flakes, and Parmesan cheese. Simmer until the sauce thickens slightly, about 3–4 minutes.
- Incorporate the Greens: Add baby spinach and stir until wilted. Adjust seasoning with salt and pepper.
- Combine and Serve: Return shrimp to the skillet and simmer for another minute to blend flavors. Garnish with fresh rosemary. Serve immediately.

- Shrimp Searing: Do not overcrowd the skillet when searing the shrimp; cook in batches if necessary to ensure a good sear, not steaming.
