Description

A delicious and elegant Creamy Tuscan Shrimp recipe: tender shrimp in a rich, velvety cream sauce with sun-dried tomatoes, garlic, and Parmesan. A perfect 20-minute weeknight dinner.

Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • Fresh rosemary, for garnish
  • Salt and pepper, to taste

Instructions

  1. Sear the Shrimp: Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper. Cook for 2–3 minutes per side until pink and cooked through. Remove and set aside.
  2. Create the Sauce: In the same skillet, reduce the heat slightly and sauté minced garlic for about 30 seconds until fragrant. Stir in sun-dried tomatoes and cook for 1 minute.
  3. Add Creaminess: Reduce heat to medium. Pour in heavy cream, then stir in Italian seasoning, red pepper flakes, and Parmesan cheese. Simmer until the sauce thickens slightly, about 3–4 minutes.
  4. Incorporate the Greens: Add baby spinach and stir until wilted. Adjust seasoning with salt and pepper.
  5. Combine and Serve: Return shrimp to the skillet and simmer for another minute to blend flavors. Garnish with fresh rosemary. Serve immediately.

Notes

  • Shrimp Searing: Do not overcrowd the skillet when searing the shrimp; cook in batches if necessary to ensure a good sear, not steaming.
  • Sauce Thickening: Let the sauce simmer long enough for the Parmesan to fully melt and the cream to reduce slightly. This is key to a velvety texture.
  • Sun-Dried Tomatoes: Use oil-packed sun-dried tomatoes for the best flavor; drain them well before chopping.
  • Serving Suggestions: This dish is wonderful served over linguine or fettuccine pasta, or alongside a simple white rice or crusty bread for dipping.
  • Herb Garnish: Using fresh rosemary for garnish adds a beautiful aroma and visual elegance just before serving.
