Description
A decadent handheld version of the classic French Onion Soup featuring jammy caramelized onions and melted Gruyère on toasted sourdough.
Ingredients

3 lbs yellow onions sliced.

1 large shallot.

12 oz Gruyère cheese.

6 thick slices sourdough bread.

1/2 cup beef stock.

4 tbsp unsalted butter.

2 sprigs fresh thyme.

1 bay leaf.

Kosher salt and black pepper.

Instructions

Melt butter and sauté onions and shallots for 10 minutes on medium-high.

Reduce heat to medium-low and cook for 45 minutes until onions are mahogany brown.

Stir in beef stock thyme and bay leaf then simmer until liquid is absorbed.

Toast buttered sourdough slices at 400F for 10 minutes until crisp.

Spoon onion mixture onto toast and top with plenty of shredded Gruyère.

Broil on high for 4-5 minutes until the cheese is bubbling and golden.

Garnish with extra thyme and serve warm.

Shred the Gruyère fresh from a block for the best melting results.

Sourdough must be at least one inch thick to support the toppings.

Discard the thyme stems and bay leaf before assembling the toasts.
