Description
A restaurant-quality Mediterranean pasta featuring large prawns, golden garlic, and a spicy chili finish in under 30 minutes.
Ingredients

150g spaghetti.

200g king or tiger prawns.

3 garlic cloves, chopped.

1 tsp chili flakes.

2 tbsp unsalted butter.

1 tbsp extra virgin olive oil.

3 tbsp fresh parsley.

1 tbsp fresh lemon juice.

1 cup reserved pasta water.

4 tbsp grated parmesan cheese.
Instructions

Boil spaghetti in salted water until al dente then reserve 1 cup of water.

Sear prawns in butter for 2-3 minutes per side until pink then set aside.

Sauté garlic and chili flakes in remaining butter on low heat for 30 seconds.

Toss pasta into the skillet with half a cup of pasta water until glossy.

Add prawns, lemon juice, olive oil, and parsley then toss gently.

Plate and top with parmesan cheese and fresh parsley before serving.
Notes

Use the starchy pasta water to create the silky sauce instead of cream.

Remove prawns immediately once pink to prevent a rubbery texture.

Grate the parmesan fresh for the best melting results.
