Ingredients

12 oz fresh cranberries

1/3 cup sugar

½ jalapeño, ribs and seeds removed (adjust for spice)

1-inch knob fresh ginger, peeled

1 clove garlic

½ cup fresh cilantro leaves

½ cup fresh parsley leaves

Juice and zest of 1–2 limes, to taste

½ teaspoon salt (more to taste)

½ cup salted roasted pistachios, chopped (optional)
Instructions

Chop the Cranberries: Pulse cranberries in a food processor until very finely chopped, but not pureed. Transfer to a mixing bowl.

Add Sugar: Toss the chopped cranberries with sugar until evenly coated.

Prepare Aromatics: Pulse jalapeño, ginger, garlic, cilantro, and parsley in the food processor until finely chopped.

Combine & Season: Mix the chopped aromatics into the cranberries. Add lime juice, zest, and salt. Stir to combine.

Optional Resting: Let the salsa rest for 12–24 hours in the fridge to allow flavors to meld and cranberries to soften.

Optional Pistachios: Chop pistachios in the food processor and fold into the salsa just before serving.

Serve: Serve chilled with your favorite dishes.
