  • 1/3 cup sugar

  • ½ jalapeño, ribs and seeds removed (adjust for spice)

  • 1-inch knob fresh ginger, peeled

  • 1 clove garlic

  • ½ cup fresh cilantro leaves

  • ½ cup fresh parsley leaves

  • Juice and zest of 1–2 limes, to taste

  • ½ teaspoon salt (more to taste)

  • ½ cup salted roasted pistachios, chopped (optional)


Instructions

  1. Chop the Cranberries: Pulse cranberries in a food processor until very finely chopped, but not pureed. Transfer to a mixing bowl.

  2. Add Sugar: Toss the chopped cranberries with sugar until evenly coated.

  3. Prepare Aromatics: Pulse jalapeño, ginger, garlic, cilantro, and parsley in the food processor until finely chopped.

  4. Combine & Season: Mix the chopped aromatics into the cranberries. Add lime juice, zest, and salt. Stir to combine.

  5. Optional Resting: Let the salsa rest for 12–24 hours in the fridge to allow flavors to meld and cranberries to soften.

  6. Optional Pistachios: Chop pistachios in the food processor and fold into the salsa just before serving.

  7. Serve: Serve chilled with your favorite dishes.
