Description

Ingredients

  • For the crust: 1 1/4 cups (150 g) all-purpose flour; 10 tbsp (140 g) cold unsalted butter, cut into cubes; 2 tbsp sugar; 1/4 tsp salt; 3–4 tbsp ice water.

  • For the filling: 4 small ripe pears, thinly sliced; 1/2 cup light brown sugar; 1 tbsp lemon juice; 1 tsp ground cinnamon; 1 tbsp cornstarch; 3 tbsp almond flakes.

  • For finishing: 1 egg, beaten with 1 tsp milk, for brushing; Coarse sugar, for sprinkling.


Instructions

  1. Make the Dough: Pulse flour, sugar, and salt. Add butter and pulse until pea-sized. Add ice water 1 tbsp at a time until dough forms. Chill for at least 30 minutes.

  2. Prepare the Filling: Combine pear slices, brown sugar, lemon juice, cinnamon, and cornstarch. Toss to coat.

  3. Assemble the Galettes: Preheat oven to 375°F. Roll out dough and cut into 6 circles. Arrange pears in the center. Fold the edges of the dough over the fruit. Sprinkle almond flakes over the pears. Brush edges with egg wash and sprinkle with coarse sugar.

  4. Bake: Bake for 20 minutes until the pastry is golden.

  5. Serve: Enjoy warm, at room temperature, or chilled.
