Description
A delicious, high-protein One Pan Beef Stroganoff recipe: tender beef and mushrooms cooked with pasta in a rich, tangy, and creamy sauce, all made in a single skillet in 30 minutes.
Ingredients
-
1 lb lean top sirloin, trimmed, or 96% lean ground beef
-
8 oz cremini or bella mushrooms, sliced
-
1/2 medium onion, diced
-
2 cloves garlic, minced
-
1 Tbsp light butter
-
Kosher salt and freshly ground black pepper, to taste
-
1 tsp fresh thyme, minced
-
3 Tbsp all-purpose flour
-
1/4 cup low-sodium beef broth (to replace the white wine)
-
4 cups low-sodium beef broth
-
2 Tbsp Worcestershire sauce
-
1 Tbsp Dijon mustard
-
8 oz protein pasta (e.g., Barilla Protein+ Cellentani)
- 1/2 cup nonfat Greek yogurt or fat-free half-and-half creamer
-
2 Tbsp fresh parsley, chopped for garnish
Instructions
-
Sauté the Aromatics: Melt butter in a large skillet over medium heat. Add mushrooms and onions; cook 3–5 minutes until browned. Season with salt and pepper.
-
Cook the Beef: Add beef to the pan and cook until browned (about 3–6 minutes). Stir everything together.
-
Build Flavor: Stir in garlic and thyme; cook 1 minute.
-
Thicken & Deglaze: Sprinkle flour over the beef mixture and cook, stirring, until lightly browned, about 1 minute. Deglaze the pan with the extra 1/4 cup beef broth.
-
Add Liquid & Pasta: Stir in the remaining beef broth, Worcestershire sauce, and Dijon mustard. Add pasta, season, and bring to a boil. Cover, reduce heat, and simmer 10–12 minutes until pasta is cooked.
-
Finish Sauce & Serve: Stir in Greek yogurt or half-and-half until heated through, about 2 minutes. Adjust seasoning as needed. Serve warm, garnished with fresh parsley.
Notes
-
One-Pan Success: Use dry pasta; its starch naturally thickens the sauce, eliminating the need for a separate step.
-
Meat Choice: Use sirloin or tenderloin for the most tender beef. Ensure ground beef is lean.
-
Deglazing Substitute: The 1/4 cup of beef broth replaces the white wine. Adding a small squeeze of lemon juice at the end can provide extra tang if desired.
-
Cream Finish: Use nonfat Greek yogurt or half-and-half creamer. Ensure it’s stirred in off heat or on very low heat to prevent curdling.
-
Storage: Leftovers will absorb a lot of sauce. Reheat gently on the stovetop with a splash of extra beef broth or milk to restore creaminess.
