- ¼ tsp pumpkin pie spice
- ¼ tsp baking powder
- 2 Tbsp chocolate chips (plus extra for topping, optional)
Instructions
- Prep the mug: Lightly grease a coffee mug or ramekin.
- Mix wet ingredients: In the mug, whisk together pumpkin puree, egg, milk, coconut sugar, and oil until smooth.
- Add dry ingredients: Stir in flour, pumpkin pie spice, baking powder, and a pinch of salt. Mix well.
- Fold in chocolate chips: Add 2 Tbsp chocolate chips and sprinkle a few extra on top if desired.
- Microwave: Cook in the microwave for 90 seconds. Keep an eye on it.
- Add toppings and serve: Top with your choice of whipped cream, ice cream, yogurt, or drizzle. Enjoy immediately.
Notes
- Microwave Time: Start checking at 60 seconds. Overcooking will make the cake tough and chewy. It should pull slightly away from the mug when done.
- Flour Choice: Gluten-free 1-to-1 baking flour works perfectly for a soft texture, but standard all-purpose flour can be used if you don’t need GF.
- Even Mix: Ensure there are no pockets of unmixed flour at the bottom of the mug by scraping the sides and bottom thoroughly.
- Storage & Reheating: Reheat day-old cake in 10–20 second intervals with a damp paper towel over the top to retain moisture.
- Flavor Boost: Add a teaspoon of peanut butter or cream cheese to the center of the batter for a molten surprise when heated.
