Description

Delicious, easy-to-make Savory Vegetable Patties: a wholesome, Börek-inspired bake of grated potatoes, carrots, and zucchini, topped with melted cheese and fresh tomato. Perfect as a main or side dish.

Ingredients

Scale

s

  • 2 cups beetroot, about 2 large beets (250 g)

  • 2 cups carrots, about 3 medium carrots (250 g)

  • 1 red onion

  • 2 cups gluten-free rolled oats (200 g)

  • ½ cup walnuts, chopped (50 g)

  • ¼ cup pumpkin seeds (40 g)

  • 1 tablespoon fresh thyme

  • 1 teaspoon oregano

  • 1 teaspoon sea salt

  • Black pepper, to taste

  • 2 tablespoons ground flaxseed + 6 tablespoons water

  • ½ cup almond milk (120 ml)

  • Olive oil (for sautéing)

Instructions

s

  1. Prep the Vegetables: Grate the potato, carrots, and zucchini. Squeeze out any excess liquid from the vegetables.

  2. Mix the Batter: In a bowl, combine all the ingredients except the cheese and tomato. Mix well.

  3. Bake: Divide the mixture into 5 portions and place them on a baking tray. Bake in a preheated oven at 356°F (180°C) for 20 minutes.

  4. Final Bake: Remove from the oven, top with shredded cheese and sliced tomato, and bake for an additional 10 minutes.

  5. Serve: Serve warm and enjoy!

Notes

s

  • Moisture Control: Squeezing the liquid out of the grated vegetables is the most crucial step. It ensures the patties hold their shape and prevents them from becoming mushy.

  • Cheese Choice: Kaşar cheese provides an authentic, stringy texture. Mozzarella is the best substitute for a similar melt.

  • Börek Flavor: The use of paprika and the baked method contributes to the savory, comforting flavor profile often found in Börek pastry filling.

  • Garnishing: Top with cheese and tomato only for the final 10 minutes of baking; this ensures the toppings do not burn while the patty sets.

  • Make Ahead: The raw grated vegetable mixture can be prepared and refrigerated for up to 24 hours. Form and bake the patties just before serving.
