Description

A deliciously easy and savory Cheesy Veggie Crostini recipe: crisp baguette slices topped with a rich, comforting filling of sautéed mushrooms, spinach, and three Italian cheeses. Perfect for parties.

  • 3 cloves garlic, minced

  • ½ medium sweet yellow onion, diced small

  • 5 mushrooms, chopped

  • ½ tsp red pepper flakes

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 16 oz fresh baby spinach

  • ⅓ cup Italian breadcrumbs

  • ⅓ cup shredded mozzarella

  • ⅓ cup grated Parmesan

  • 6 Tbsp olive oil

  • 1 baguette, sliced into rounds

  • ⅔ cup finely shredded mozzarella (for sprinkling on top)

  • ¼ cup grated Parmesan (for sprinkling on top)


Instructions

  1. Sauté Aromatics: In a medium pot, sauté the onions and garlic in butter until softened and fragrant.

  2. Cook Veggies: Add the chopped mushrooms, red pepper flakes, salt, and black pepper. Cook until the mushrooms release moisture and begin to brown. Add the fresh spinach and cook until fully wilted.

  3. Make the Filling Base: Stir in the breadcrumbs, mozzarella, and Parmesan. Mix until well combined and creamy.

  4. Prepare Bread: Brush each baguette slice with olive oil and place on a baking sheet.

     

  5. Top & Sprinkle: Top each slice with a spoonful of the veggie mixture. Sprinkle additional mozzarella and Parmesan on top.

  6. Bake: Bake for 8–10 minutes, or until the cheese is melted and the edges of the bread are crisp.

  7. Serve: Serve warm and enjoy.
