⅓ cup Italian breadcrumbs

1 baguette, sliced into rounds

⅔ cup finely shredded mozzarella (for sprinkling on top)

Instructions

Sauté Aromatics: In a medium pot, sauté the onions and garlic in butter until softened and fragrant.

Cook Veggies: Add the chopped mushrooms, red pepper flakes, salt, and black pepper. Cook until the mushrooms release moisture and begin to brown. Add the fresh spinach and cook until fully wilted.

Make the Filling Base: Stir in the breadcrumbs, mozzarella, and Parmesan. Mix until well combined and creamy.

Prepare Bread: Brush each baguette slice with olive oil and place on a baking sheet.
