- 2 green onions, finely chopped

Instructions
- Prepare the Batter: In a large bowl, mix flour and cornstarch. Gradually add water while stirring until a thick batter forms — thick enough to coat the corn and ingredients but not too runny.
- Add Ingredients: Mix in corn, green onions, garlic, coriander, turmeric, salt, and pepper until evenly coated.
- Heat the Oil: Heat oil in a skillet over medium heat to about 350°F (175°C).
- Fry the Fritters: Drop spoonfuls of batter into hot oil and flatten slightly. Fry in batches, avoiding overcrowding. Cook 3–4 minutes per side until golden and crispy. Remove with a slotted spoon and drain on paper towels.
- Serve: Serve hot with your favorite dipping sauce, such as sweet chili sauce.

- Batter Consistency: The batter should be quite thick, similar to a pancake batter, to ensure the fritters hold their shape while frying.
- Oil Temperature: Maintaining 350°F is crucial. If the oil is too cool, the fritters will absorb too much oil and be soggy.
- Flavor Boost: For a spicier kick, add a pinch of red pepper flakes or finely diced jalapeño to the batter.
