Ingredients

1 sheet puff pastry.

400 g sliced mushrooms.

1 1/2 cups Gruyère cheese.

2 tbsp butter.

1 tbsp olive oil.

Fresh thyme and sea salt flakes.
Instructions

Preheat oven to 210C and place a baking tray inside to get professionally hot.

Sauté sliced mushrooms in oil and butter for 5 minutes then drain excess liquid.

Place cold pastry on baking paper and fold edges to form a 1 cm border.

Brush the border with melted butter and spread Gruyère cheese over the base.

Top with the cooked mushrooms and transfer to the hot tray in the oven.

Bake for 30 minutes until golden and puffed then garnish with thyme and truffle oil.
