2 cups whole milk.
-
1 cup vegetable broth.
-
1 1/2 cups cheddar cheese.
-
1/2 yellow onion.
-
3 tbsp unsalted butter.
-
4 cloves garlic.
-
1 tbsp fresh thyme.
-
1/4 cup flour.
-
Sea salt and black pepper.
Instructions
-
Preheat oven to 400F and grease a 9×13-inch baking dish with butter.
-
Whisk melted butter and flour for 1 minute then gradually add milk and broth until smooth.
-
Stir in garlic thyme salt and pepper then cook until the sauce lightly coats a spoon.
-
Arrange half of the potatoes and onions in the dish and pour over half of the sauce and 1 cup cheese.
-
Repeat with remaining layers then cover with foil and bake for 30 minutes.
-
Remove foil and bake for 35-40 more minutes until potatoes are tender and golden.
-
Let the dish rest for 20 minutes at room temperature before slicing and serving.
Notes
-
Using a mandoline for 1/8-inch slices is the secret to the professional-grade texture of these potatoes.
-
The 20-minute resting phase is essential for the starch to set and the sauce to reach its velvet-like finish.
-
This dish is perfect for social gatherings and can be stored in the fridge for up to 4 days.
