Ingredients

2 taco-sized tortillas.

1/2 cup shredded cheddar cheese.

1/2 cup chopped kimchi.

1 tbsp water.

1 sliced scallion.
Instructions

Heat olive oil in a pan and crisp both sides of the tortillas over medium heat.

Sprinkle half the cheese and all the chopped kimchi onto the tortillas.

Crack one egg onto each tortilla and sprinkle with the remaining cheese.

Add 1 tablespoon of water to the pan and cover immediately to steam.

Cook for 4-6 minutes until whites are set and yolks remain runny.

Garnish with sliced scallions and black pepper then serve warm.
