Ingredients

2 1/4 tsp instant yeast.

Instructions

Whisk flours salt and yeast together in a large bowl.

Stir in water until a shaggy dough forms then fold in nuts and fruit.

Cover and let rise at room temperature for 18-20 hours.

Shape into a round and let rise in a Dutch oven for 2 hours.

Score the top and place the pot into a cold oven.

Set oven to 450F and bake for 50 minutes covered.

Remove lid and bake for 10 more minutes until golden brown.

Cool on a wire rack before slicing and serving with fresh butter.
