Instructions

  1. Bake the potatoes: Wash the potatoes and drizzle with 1 tbsp olive oil, salt, and pepper. Air fry or bake at 400°F for 45–50 minutes, or until fully cooked.

  2. Caramelize the onions: Heat the remaining olive oil in a pan. Add the sliced onions and cook on low heat for 30 minutes, stirring occasionally.

  3. Add aromatics and sauces: Add garlic, tamari, and balsamic vinegar. Cook for 1 minute.

  4. Thicken the mixture: Sprinkle in the flour. Pour in vegetable stock and heavy cream. Simmer 5–10 minutes until thickened.

  5. Add cheese: Remove from heat and stir in 2/3 of the cheddar and mozzarella.

  6. Prepare the potato skins: Slice baked potatoes in half lengthwise and scoop out the insides into a bowl.
