- 1/2 teaspoon freshly grated ginger
- Pinch of cinnamon
- 1 small eggplant, diced
- 1 zucchini, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 2 tablespoons black olives, chopped
- 1 tablespoon capers
- 1 tablespoon tomato paste
- 2 tablespoons olive oil (for caponata)
- 1 tablespoon red wine vinegar
- 1 teaspoon sugar
- Salt and pepper, to taste (for caponata)
- Microgreens or fresh coriander leaves (for garnish)
Instructions
- Prepare the Caponata: In a skillet over medium heat, warm olive oil. Add eggplant, zucchini, red bell pepper; sauté until soft/golden. Stir in red onion; cook until translucent. Add tomato paste, olives, capers, red wine vinegar, sugar. Simmer 5-7 mins until glossy/rich. Season with salt/pepper. Set aside.
- Make the Pineapple Jerk Glaze: In a small saucepan, combine pineapple, brown sugar, rice vinegar, jerk sauce, soy sauce, ginger, cinnamon. Simmer over medium heat for ~10 mins until thickened. Blend for smoother texture, if desired.
- Marinate and Grill the Shrimp: Toss shrimp with olive oil, jerk seasoning, garlic, lime juice, salt. Marinate 10 mins. Grill or pan-sear on high heat for 2-3 mins per side until charred/cooked through.
- Plate and Assemble: Using a ring mold or small bowl, shape caponata onto each plate. Arrange 2–3 shrimp on top. Drizzle generously with pineapple glaze. Garnish with microgreens or coriander.
