A delicious, creamy Lemongrass Chicken Rice recipe: tender chicken thighs in a zesty coconut lemongrass sauce, served with jasmine rice and roasted zucchini.
Ingredients

1.5 lb boneless, skinless chicken thighs

1 tsp paprika, garlic powder, onion powder, salt, and pepper

3 garlic cloves, minced

1 jalapeño, minced

2 tbsp lemongrass or lemongrass paste

1 tbsp brown sugar

1 can (14 oz) unsweetened coconut cream

2 zucchini, sliced and roasted

Chicken: Sauté seasoned chicken in olive oil for 8-10 mins. Remove and chop.

Sauce Base: In the same pan, sauté garlic, jalapeño, and ginger. Add lemongrass and brown sugar.

Simmer: Pour in coconut cream and bring to a simmer. Add lime zest, juice, and salt.

Finish: Return chicken to the pan. Stir in fresh herbs.

Serve: Serve over jasmine rice with roasted zucchini coins.
