  • 1 tsp paprika, garlic powder, onion powder, salt, and pepper

  • 1 jalapeño, minced

  • 1-inch piece fresh ginger, grated

  • 2 tbsp lemongrass or lemongrass paste

  • 1 tbsp brown sugar

  • 1 can (14 oz) unsweetened coconut cream

  • Zest and juice of 1 lime

  • Fresh cilantro or basil

  • Cooked jasmine rice

  • 2 zucchini, sliced and roasted


Instructions

  1. Chicken: Sauté seasoned chicken in olive oil for 8-10 mins. Remove and chop.

  2. Sauce Base: In the same pan, sauté garlic, jalapeño, and ginger. Add lemongrass and brown sugar.

  3. Simmer: Pour in coconut cream and bring to a simmer. Add lime zest, juice, and salt.

  4. Finish: Return chicken to the pan. Stir in fresh herbs.

  5. Serve: Serve over jasmine rice with roasted zucchini coins.

  • Zucchini: Roast coins at 450°F with oil and salt for 10-15 minutes.
