  • 27 mini pavlovas or meringue nests

  • 600 ml (2 ½ cups) thickened cream, whipped to stiff peaks

  • 1 punnet raspberries

  • 1 punnet strawberries, halved

  • ⅓ cup pistachios, roughly chopped

  • Icing sugar (for dusting)


Instructions

  1. Make the Strawberry Sauce: Combine chopped strawberries, caster sugar, lemon juice, and 2 tbsp water in a pot. Bring to a boil, then simmer for 2–3 minutes until thickened. Strain and set aside to cool.

  2. Assemble the Wreath: Lay mini pavlovas in a circular wreath shape on a platter. Spoon or pipe whipped cream onto and between the pavlovas.

  3. Decorate: Place macarons, fresh raspberries, and halved strawberries randomly around the wreath. Scatter chopped pistachios and drizzle with the strawberry sauce.

  4. Finish: Dust with icing sugar just before serving. Serve and enjoy!

  • Meringue Stability: Ensure your meringue nests/pavlovas are completely cool and dry before adding the cream; moisture will cause them to weep.
