  • 8 oz shiitake mushrooms, sliced
  • 8 oz cremini mushrooms, sliced
  • 1/2 cup diced shallots
  • 2 garlic cloves, minced
  • 2 tsp fresh thyme leaves
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp balsamic vinegar
  • 2 tbsp heavy cream For Assembly:
  • 1 French baguette, sliced diagonally
  • 6 oz goat cheese, softened
  • Balsamic vinegar (for drizzling)
  • Fresh thyme leaves (for garnish)

Instructions

  • Cook the Mushrooms: Heat 3 tbsp of olive oil in a large skillet over medium heat. Add the sliced mushrooms and diced shallots. Cook, stirring occasionally, for 6-8 minutes, adding more olive oil if needed. Stir in the minced garlic, thyme, salt, and pepper. Cook for another 2-3 minutes until fragrant. Add the balsamic vinegar, then remove from heat and stir in the heavy cream. Set aside.
  • Prepare the Crostini: Preheat your broiler. Spread softened goat cheese onto each baguette slice. Top each slice with a spoonful of the mushroom mixture.
  • Broil the Crostini: Place the crostini under the broiler for 2-3 minutes, until the mushrooms sizzle and the edges of the bread turn golden brown.
  • Finish & Serve: Remove from the oven and drizzle with balsamic vinegar. Garnish with fresh thyme leaves.

  • Mushroom Browning: Don’t overcrowd the pan when cooking mushrooms; this allows them to brown nicely instead of steaming.
  • Goat Cheese: Ensure your goat cheese is softened at room temperature for easy spreading.
