Ingredients
Scale
For the Mushroom Topping:
- 1/4 cup extra-virgin olive oil (divided)
- 8 oz shiitake mushrooms, sliced
- 8 oz cremini mushrooms, sliced
- 1/2 cup diced shallots
- 2 garlic cloves, minced
- 2 tsp fresh thyme leaves
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tbsp balsamic vinegar
- 2 tbsp heavy cream For Assembly:
- 1 French baguette, sliced diagonally
- 6 oz goat cheese, softened
- Balsamic vinegar (for drizzling)
- Fresh thyme leaves (for garnish)
Instructions
- Cook the Mushrooms: Heat 3 tbsp of olive oil in a large skillet over medium heat. Add the sliced mushrooms and diced shallots. Cook, stirring occasionally, for 6-8 minutes, adding more olive oil if needed. Stir in the minced garlic, thyme, salt, and pepper. Cook for another 2-3 minutes until fragrant. Add the balsamic vinegar, then remove from heat and stir in the heavy cream. Set aside.
- Prepare the Crostini: Preheat your broiler. Spread softened goat cheese onto each baguette slice. Top each slice with a spoonful of the mushroom mixture.
- Broil the Crostini: Place the crostini under the broiler for 2-3 minutes, until the mushrooms sizzle and the edges of the bread turn golden brown.
- Finish & Serve: Remove from the oven and drizzle with balsamic vinegar. Garnish with fresh thyme leaves.
Notes
- Mushroom Browning: Don’t overcrowd the pan when cooking mushrooms; this allows them to brown nicely instead of steaming.
- Goat Cheese: Ensure your goat cheese is softened at room temperature for easy spreading.
- Broiler Watch: Broiling is fast! Keep a close eye on the crostini to prevent the bread from burning.
- Make Ahead: The mushroom topping can be made a day in advance and stored in the fridge. Reheat slightly before assembling and broiling.
- Serving Fresh: Crostini are best served immediately after broiling to enjoy the crisp bread and warm toppings.
