A delicious, vibrant Prawn Pasta with Garlic & Cherry Tomatoes featuring succulent prawns, sweet burst cherry tomatoes, and a silky garlic-butter sauce. The perfect 35-minute gourmet dinner.
Ingredients

750 g prawns, peeled and deveined

4 punnets cherry tomatoes, halved

2 shallots, finely diced

3 tbsp butter

4 tbsp olive oil

5 garlic cloves, sliced or minced

1 red chili and 1 green chili, sliced

Zest of 1 lemon

Fresh basil and parsley, chopped

400 g linguine

Salt and black pepper
Instructions

Cook linguine until al dente. Reserve 1/2 cup pasta water and drain.

Sauté shallots, garlic, and chilies in olive oil and butter until soft.

Add cherry tomatoes and cook until burst and juicy. Season well.

In a separate pan, sear prawns with lemon zest until pink and opaque.

Combine prawns and tomato sauce. Toss in the linguine with reserved pasta water.

Stir until silky and coated. Garnish with fresh herbs and serve.
