For the Beef & Veggies:
- 1/4 cup sesame oil or olive oil
- 2 tablespoons butter
- 1/3 cup green onions, sliced
- 1 to 3 tablespoons Thai red curry paste (adjust to taste)
- 3 to 4 cloves garlic, chopped
- 1 shallot, chopped
- 1 pound lean ground beef
- 1 egg
- 1 to 2 bell peppers, thinly sliced
- 1 cup chopped broccoli florets
- Chili flakes, to taste
- 1/2 cup chopped fresh Thai or regular basil For the Noodles & Sauce:
- 4 squares ramen noodles, egg noodles, or 6 oz rice noodles
- 1/3 cup tamari or soy sauce
- 1 teaspoon honey
Instructions
- Cook the Aromatics: In a large skillet, heat the oil and sliced green onions over medium heat until very fragrant, about 3 to 5 minutes.
- Make the Curry Base: Lower the heat and stir in the butter, red curry paste, garlic, shallots, and chili flakes. Cook for 2 minutes.
- Add Beef & Caramelize: Add the ground beef and cook until browned, about 5 minutes. Pour in 2 tablespoons of tamari and the honey. Let the beef caramelize for 2 minutes.
- Add Veggies & Egg: Stir in the egg and sliced vegetables. Cook until just tender.
- Finish with Noodles & Serve: Meanwhile, cook the noodles according to package instructions. Drain and toss with the beef mixture and the remaining tamari (about 1/3 cup). Cook everything together for another 2 to 3 minutes. Remove from heat and serve hot, topped with fresh basil, extra green onions, and crushed peanuts if desired.
Notes
- Red Curry Paste: Adjust the amount of red curry paste to your personal taste and desired spice level. 1 tablespoon is mild, 3 is very spicy.
- Noodle Choice: The recipe works well with various noodles. Ramen, egg noodles, or rice noodles all offer a great base.
- Beef Doneness: Ensure the ground beef is fully browned and any excess fat is drained before adding the sauce for the best flavor and texture.
