Instructions
- Preheat and Prepare: Get your oven ready by preheating it to 425°F (220°C). Line an 8-inch square baking sheet with parchment paper; this makes cleanup a dream!
- Whisk the Glaze: In a small bowl, whisk together the honey mustard, extra-virgin olive oil, lemon juice, salt, and freshly ground black pepper until well combined. This is your flavorful coating for the pears.
- Prepare the Pears: Take your ripe Bosc pears. Carefully cut each pear in half lengthwise and core them to remove the seeds. For stability on the baking sheet, slice a small piece off the rounded backside of each pear half so they lie flat.
- Glaze and Initial Bake: Brush the cut surfaces and all over the pear halves generously with the prepared mustard glaze. Place them cored-side down on your lined baking sheet.
- First Bake & Basting: Bake the pears for 30 minutes. Halfway through the baking time (around 15 minutes), gently baste them with any glaze that has collected on the baking sheet. This ensures maximum flavor and a lovely sheen.
- Add the Brie & Final Bake: Gently flip the pears so they are cored-side up. Baste them once more. Carefully place one slice of Brie cheese into the hollow of each pear half.
- Melt & Soften: Return the baking sheet to the oven and bake for another 3–5 minutes, or until the pears are tender when pierced with a fork and the Brie has softened and is gloriously melty.
- Garnish and Serve: Once out of the oven, sprinkle each warm pear half generously with the chopped toasted pistachios. Serve immediately for the best experience.

- Choosing Your Pears: Bosc pears are ideal for their firm texture that holds up well to roasting and their natural sweetness. However, Anjou or Bartlett pears can also work if they are firm and ripe.
