Description
A delicious, gourmet Sticky Roasted Carrots recipe: honey and orange glazed carrots with crispy quinoa, served over a creamy dill tahini yoghurt sauce.
Ingredients

1.1 lbs (500g) Carrots, peeled

3 tbsp Honey (plus 1/2 tsp for chilli)

2 tbsp Butter

1 Orange (juice and zest)

1 Lime (juice for pickling)

1 Fresh Chilli, sliced

1 cup cooked Quinoa
-
1/2 cup Greek Yoghurt

1 tbsp Tahini
-
Fresh Dill, chopped
Instructions

Roast: Bake carrots at 180°C (350°F) for 30-40 minutes with oil, salt, and pepper.

Pickle: Mix chilli with lime juice and 1/2 tsp honey.

Glaze: Brown butter, add honey, orange juice/zest, and the chilli pickling liquid. Reduce until thick.

Crisp: Coat carrots in glaze, add quinoa to the tray, and bake 5-10 more minutes.

Sauce: Mix yoghurt, tahini, and dill.

Serve: Spread sauce on a plate, top with carrots and quinoa. Garnish with chilli and dill.

Carrots: Leave them whole for a more elegant presentation.

Chilli: Serrano chillies provide a nice heat, while Jalapeños are milde
