- 1 large sweet potato, peeled and chopped into large chunks

- ½ tsp ground black pepper
- ¼ cup non-dairy milk
- 3 cups kale, washed, dried, stems removed, lightly massaged
- ½ medium onion, thinly sliced
- 1½ cups vegan mozzarella cheese
- ½ cup balsamic vinegar
- 2 tsp brown sugar (optional)
Instructions
- Prep Potato & Cook: Bring a pot of water to a boil. Add the sweet potato chunks and cook for 12–15 minutes, until fork-tender. Drain well.
- Make the Mash: Mash the sweet potato with non-dairy milk, salt, and pepper until smooth and spreadable.
- Prepare Balsamic Drizzle: While the potato cooks, prepare the balsamic drizzle. In a small pot, heat balsamic vinegar and brown sugar over high heat. When it starts bubbling, reduce heat to low and simmer for about 2 minutes, stirring occasionally until slightly thickened. Remove from heat and watch carefully to prevent hardening.
- Spread Base & Toppings: Preheat the oven to 375°F (190°C). Spread the sweet potato mash evenly over the pre-baked pizza crust. Top with kale, sliced onions, and vegan mozzarella.
- Bake: Bake for 10 minutes, or until the kale crisps and cheese melts.
