Instructions
- Preheat Oven & Cook Potatoes: Preheat your oven to 375°F (190°C). Boil or steam the sweet potato cubes until tender. Drain well.
- Mash Sweet Potatoes: In a large bowl, mash the sweet potatoes with sugar, maple syrup, vegan milk, oil, vegan butter, cinnamon, and sea salt until smooth and creamy.
- Prepare the Topping: In a small bowl, mix almond flour, melted vegan butter, maple syrup, and chopped pecans until crumbly.
- Assemble the Casserole: Transfer the mashed sweet potatoes to a greased baking dish. Sprinkle the pecan topping evenly over the top.
- Bake: Bake for 25–30 minutes, or until the topping is golden and crispy.
- Serve: Let cool slightly before serving. Enjoy warm!
