  • 2 tbsp Greek yogurt

  • Cracked black pepper, to taste For the Topping:
  • 1 medium sweet potato, peeled and finely diced
  • 1½ tbsp olive oil
  • Sea salt
  • 68 fresh sage leaves To Serve:
  • Crusty bread, crackers, or pita chips
  • Extra olive oil for drizzling

Instructions

  • Roast the Sweet Potato: Preheat oven to 190°C (375°F). Toss sweet potato with 1 tbsp olive oil and salt. Spread on baking sheet and roast for 20 minutes until golden and tender.
  • Make the Cheese Dip: Blend feta, goat cheese, yogurt, olive oil, lemon zest, garlic powder, and black pepper until smooth.
  • Bake the Cheese Dip: Transfer cheese mixture to a small baking dish. Bake for 15–18 minutes until soft, golden at the edges, and puffed.
  • Fry the Sage: In the last 5 minutes of roasting sweet potatoes, heat ½ tbsp olive oil in a skillet. Fry sage leaves until crisp (about 20 seconds). Drain on paper towels.
  • Assemble and Serve: Top baked dip with roasted sweet potatoes and crispy sage. Drizzle with olive oil. Serve warm with bread or crackers.
