Description

Incredibly easy White Chocolate and Pistachio Rochers: golden, crunchy clusters of roasted almonds and pistachios coated in creamy white chocolate. A quick, elegant, and no-bake dessert ready in 30 minutes!

Ingredients

Scale

Nut Base

  • 1 cup whole roasted almonds
  • 1 cup roasted pistachios Chocolate Coating
  • 8.8 oz good quality white chocolate
  • 1 teaspoon neutral oil (optional, for shine) Optional Flavor Twist
  • 1 pinch ground cardamom
  • 1 teaspoon rosewater

Instructions

  • Melt the Chocolate: Break the white chocolate into small pieces and melt gently using a double boiler or microwave in short bursts, stirring often until smooth.
  • Add Flavors (Optional): Stir in the ground cardamom or rosewater if using.
  • Mix in the Nuts: Add the roasted almonds and pistachios. Stir until all the nuts are evenly coated in the melted chocolate.
  • Form the Clusters: Drop spoonfuls of the mixture onto a parchment-lined tray. Shape into rustic, bite-sized mounds.
  • Set and Chill: Let the clusters firm up at room temperature or refrigerate for about 20 minutes until fully set.
  • Serve: Enjoy these sweet, crunchy rochers as a quick treat or elegant dessert bite.

Notes

  • Chocolate Melting: Melt white chocolate slowly. If it gets too hot, it will seize. A double boiler is safer than a microwave.
  • Shine: A teaspoon of neutral oil (like coconut or vegetable) stirred into the melted chocolate can help increase its shine once set.
  • Nut Prep: Ensure your nuts are roasted before use for the best flavor. They can be lightly toasted in a dry pan if they aren’t already roasted.
  • Serving Temperature: Rochers are best served chilled, as the cold temperature gives the chocolate the firmest, most satisfying crunch.
  • Gifting: Once set, place the rochers in small paper liners or a decorative box for an elegant, homemade gift.
