Description

Authentic Chorizo Stuffed Jalapeños filled with gooey melted Queso Asadero and spiced Mexican beef chorizo, served warm over corn tortillas with fresh cilantro.


Ingredients

  • 6 to 8 fresh jalapeño peppers

  • 1 tsp extra virgin olive oil

  • 5 oz Mexican beef chorizo

  • 5 oz Queso Asadero, coarsely grated

  • 6 to 8 corn tortillas

  • 3 tbsp fresh cilantro, finely chopped

  • 0.5 tsp kosher salt to taste


Instructions

  1. Place whole jalapeños in a saucepan half-filled with water, bring to a boil, and simmer for 5 minutes until pale green, then let cool in water.

  2. Heat olive oil in a skillet over medium heat, add Mexican beef chorizo, break apart with a spoon, and cook for 5 to 7 minutes until browned.

  3. Cut a lengthwise slit down the center of each cooled jalapeño, keeping stems and tips intact, and carefully scrape out all seeds and veins.

  4. Stuff each pepper cavity generously with grated Queso Asadero, then spoon the cooked beef chorizo evenly over the top.

  5. Place stuffed peppers on a baking sheet and broil on high for 2 to 5 minutes until the cheese is melted and bubbling.

  6. Serve hot over warm corn tortillas, garnished with fresh cilantro and a sprinkle of kosher salt in New York.
