Description
A velvety, comforting French Chestnut Soup made with roasted chestnuts, sweet onions, rosemary, milk, and butter-glazed whole chestnuts, ready in 31 minutes.
Ingredients

1 tbsp extra-virgin olive oil

1 medium yellow onion, sliced

1 lb roasted chestnuts, roughly chopped

2.5 cups cold water

1 vegetable bouillon cube

1.5 cups whole milk

8 whole roasted chestnuts, for garnish

1 tbsp unsalted butter

Instructions

Heat olive oil in a large pot over medium heat, add sliced onion and a pinch of salt, and cook for 4 minutes until softened.

Add chopped chestnuts and cook for 2 minutes to warm and coat in oil.

Add water and chopped rosemary, bring to a boil, then add the vegetable bouillon cube.

Reduce heat to medium-low, cover, and simmer for 15 minutes until chestnuts are completely tender.

Remove pot from heat and blend until smooth and velvety using a hand-held immersion blender.

Return pot to low heat, add whole milk, and cook for another 5 minutes without boiling.

Season with kosher salt and black pepper to taste.

Melt butter in a small frying pan over low heat, add 8 whole chestnuts and a pinch of salt, and cook for 10 minutes until golden and glistening.

Ladle soup into bowls, top with buttery whole chestnuts, and serve warm in New York.
