A tall Goat Cheese Deep Dish Quiche featuring a flaky vinegar pastry crust sautéed leeks baby spinach sun-dried tomatoes and creamy chèvre.


Ingredients

  • 1.5 cups all-purpose flour

  • 1/2 tsp fine sea salt

  • 1/2 cup cold unsalted butter

  • 1/4 cup vegetable shortening

  • 1 small fresh egg

  • 2 tbsp cold water

  • 1/2 tbsp white vinegar

  • 2 fresh leeks

  • 3 tbsp sun-dried tomato oil

  • 3 oz fresh baby spinach

  • 4 oz sun-dried tomatoes in oil

  • 5 oz soft goat cheese

  • 8 large fresh eggs

  • 1.5 cups heavy whipping cream

  • 1 tsp fine sea salt

  • 1/2 tsp black pepper


Instructions

  1. Pulse flour and salt in a food processor cut in cold butter and shortening until coarse crumbs form.

  2. Whisk egg cold water and vinegar add to flour mix until dough forms wrap and chill for 20 minutes.

  3. Sauté sliced leeks in sun-dried tomato oil in a skillet for 7 minutes then add spinach for 2 minutes to wilt.

  4. Whisk 8 eggs heavy cream salt and black pepper together in a large bowl.

  5. Stir cooked leeks spinach sun-dried tomatoes and half of the goat cheese into the egg mixture.

  6. Roll chilled dough into a 14-inch circle and press into a 9-to-10-inch deep-dish pie pan.

  7. Pour custard into crust sprinkle remaining goat cheese on top and place pan on a baking sheet.

  8. Bake at 400°F (200°C) for 40 minutes tent loosely with foil and bake for another 35 minutes until set.

  9. Rest on a wire rack for 1 hour slice into wedges and serve in New York.

Notes

  • Sauté leeks and spinach thoroughly so excess moisture evaporates before adding to custard.

  • Tent pan loosely with foil halfway through baking to prevent over-browning.
