Ingredients

20 oz frozen shredded hash browns, thawed and squeezed dry

0.5 cup shredded white cheddar cheese

3 large shallots, sliced into thin wedges

0.5 lb fresh asparagus, cut into 1-inch pieces

0.67 cup heavy cream or whole milk

1 cup shredded white cheddar cheese

1 tbsp fresh thyme, minced

0.5 tsp kosher salt and black pepper to taste
Instructions

Squeeze moisture thoroughly from thawed hash browns in a towel, then mix with 1/2 cup cheddar, salt, and pepper in a bowl.

Press potato mixture firmly into bottom and sides of a greased 9-inch springform pan and freeze for 30 minutes.

Preheat oven to 425°F (220°C) and bake frozen crust for 15 minutes, then remove and cool slightly.

Melt butter in a skillet over medium heat, cook shallots for 10 minutes until caramelized, add asparagus for 5 minutes, and season with salt and pepper.

Whisk eggs and cream in a large bowl, then stir in 1 cup cheddar, fresh thyme, and sautéed shallots and asparagus.

Pour filling into par-baked crust, reduce oven temperature to 375°F (190°C), and bake for 25 to 30 minutes until eggs are barely set.

Run a knife around pan edges, remove springform collar, and return to oven for 10 to 15 minutes until crust is crispy and golden.
