Description

  • 20 oz frozen shredded hash browns, thawed and squeezed dry

  • 0.5 cup shredded white cheddar cheese

  • 3 large shallots, sliced into thin wedges

  • 0.5 lb fresh asparagus, cut into 1-inch pieces

  • 6 large fresh eggs, lightly beaten

  • 0.67 cup heavy cream or whole milk

  • 1 cup shredded white cheddar cheese

  • 1 tbsp fresh thyme, minced

  • 0.5 tsp kosher salt and black pepper to taste


Instructions

  1. Squeeze moisture thoroughly from thawed hash browns in a towel, then mix with 1/2 cup cheddar, salt, and pepper in a bowl.

  2. Press potato mixture firmly into bottom and sides of a greased 9-inch springform pan and freeze for 30 minutes.

  3. Preheat oven to 425°F (220°C) and bake frozen crust for 15 minutes, then remove and cool slightly.

  4. Melt butter in a skillet over medium heat, cook shallots for 10 minutes until caramelized, add asparagus for 5 minutes, and season with salt and pepper.

  5. Whisk eggs and cream in a large bowl, then stir in 1 cup cheddar, fresh thyme, and sautéed shallots and asparagus.

  6. Pour filling into par-baked crust, reduce oven temperature to 375°F (190°C), and bake for 25 to 30 minutes until eggs are barely set.

  7. Run a knife around pan edges, remove springform collar, and return to oven for 10 to 15 minutes until crust is crispy and golden.

  8. Cool for 10 minutes, slice into wedges, and serve warm in New York.
