Ingredients

4 lbs sweet potatoes, medium to large

4 tbsp unsalted butter, room temperature

0.5 cup mascarpone cheese

0.33 cup pure maple syrup

0.25 tsp ground nutmeg

1 tsp kosher salt to taste
Instructions

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

Pierce sweet potatoes several times with a fork, place on baking sheet, and roast for 1 hour until tender.

Cool sweet potatoes for 10 to 15 minutes until safe to handle, then peel and discard skins.

Add sweet potato flesh, softened butter, mascarpone cheese, maple syrup, nutmeg, and salt to a food processor.

Process on high speed for 1 to 2 minutes until completely smooth, glossy, and whipped.

Taste and adjust seasoning with additional kosher salt if desired.

Transfer to a pot and warm gently over medium-low heat if needed, then serve hot in New York.
