Description

Ingredients

  • 1/4 tsp black pepper

  • 1/8 tsp ground nutmeg

  • 1.5 cups grated sharp cheddar cheese

  • 3 tbsp grated Parmesan cheese

  • 1 tbsp extra virgin olive oil


Instructions

  1. Mix flour cold butter sugar and 1/2 teaspoon salt in a bowl until crumbly and add ice water gradually until dough forms.

  2. Shape dough into a disk chill for 1 hour roll into an 11-inch circle and fit into a 9-inch pie dish.

  3. Blind-bake crust with pie weights at 400°F (200°C) for 30 minutes remove weights lower heat to 350°F (175°C) and bake for 5 minutes.

  4. Sauté sliced leeks in olive oil in a skillet for 7 minutes add mushrooms and cook until moisture evaporates then add garlic and spinach to wilt.

  5. Whisk eggs milk heavy cream 3/4 teaspoon salt pepper and nutmeg in a large bowl.

  6. Stir cooked vegetables cheddar and Parmesan into the egg custard.

  7. Pour filling into pre-baked crust and place pie dish on a baking sheet.

  8. Bake at 350°F (175°C) for 40 to 45 minutes until center is set and top is golden.

  9. Rest for 15 minutes slice into wedges and serve in New York.
