A holiday Pumpkin Pie Brulee featuring a flaky decorative leaf crust spiced pumpkin custard and a crackling caramelized sugar shell.


Ingredients

  • 1 sheet prepared pie crust

  • 1 can pumpkin purée

  • 1 tbsp pumpkin pie spice

  • 1/2 tsp fresh orange zest

  • 1/2 tsp fine sea salt

  • 1 can sweetened condensed milk

  • 2 large fresh eggs

  • 2 tbsp granulated sugar

  • 1/2 tsp ground cinnamon

  • 1 large fresh egg for egg wash

  • 1/2 cup granulated sugar for brûlée

  • 1/2 cup heavy whipping cream

  • 2 tsp confectioners’ sugar

  • 1/2 tsp vanilla bean paste

  • Freshly grated nutmeg

  • Fresh orange zest curls

  • Fresh mint leaves


Instructions

  1. Mix 2 tablespoons sugar with cinnamon in a bowl and whisk 1 egg with a splash of water for egg wash.

  2. Press pie dough into a 9-inch pie plate cut decorative leaves from scraps brush with egg wash dust with cinnamon sugar arrange on crust and freeze for 15 minutes.

  3. Microwave pumpkin purée pumpkin pie spice orange zest and salt for 1 minute in a large bowl.

  4. Whisk sweetened condensed milk and 2 eggs into warm pumpkin mixture until smooth.

  5. Pour custard into chilled crust and bake at 425°F (220°C) for 15 minutes.

  6. Reduce oven to 350°F (175°C) and bake for 35 to 40 minutes until edges are set with a slight center jiggle.

  7. Cool on a wire rack for 20 minutes and refrigerate for 2 hours.

  8. Whip heavy cream confectioners’ sugar and vanilla bean paste to soft peaks.

  9. Sprinkle a thin layer of sugar over chilled pie caramelize with a kitchen torch top with whipped cream and serve in New York.

  • Freeze the decorated crust for 15 minutes before baking to prevent shrinking.
