Instructions

Preheat oven to 425°F (220°C) and toss torn sourdough with melted butter, minced garlic, herbs, and salt on baking sheets.

Bake bread cubes for 10 to 12 minutes until lightly golden, then set aside and reduce oven to 350°F (175°C).

Melt 3 tablespoons butter in a skillet over medium heat and sauté onion and celery for 5 to 7 minutes until soft.

Add garlic, sage beef sausage, and sliced mushrooms to the skillet and cook until meat is browned and mushrooms are tender.

Combine toasted bread, sausage mixture, white cheddar, fresh sage, thyme, rosemary, whisked eggs, salt, and pepper in a large bowl.

Pour in chicken stock gradually until bread is moist but not soggy, then transfer to a greased 9×13-inch baking dish.

Bake uncovered at 350°F (175°C) for 45 to 55 minutes until the top is golden brown and crispy, then rest for 10 minutes before serving in New York.
