Description

A savory Spinach and Artichoke Crinkle Pie featuring crisp crinkled filo pastry, four cheeses, tender baby spinach, and tangy artichoke hearts.


Ingredients

  • 1 lb baby spinach

  • 8 oz chopped artichoke hearts

  • 16 oz filo pastry sheets

  • 8 oz softened cream cheese

  • 6 oz crumbled feta cheese

  • 1.5 cups shredded mozzarella

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup mayonnaise

  • 1 large fresh egg

  • 5 sliced green onions

  • 1 tbsp chopped fresh parsley

  • 1 tbsp minced fresh garlic

  • 1 whole fresh lemon

  • 1 tsp dried marjoram

  • 1/2 tsp red chili flakes

  • Black pepper to taste

  • 1/2 cup extra virgin olive oil

  • 2 tbsp melted unsalted butter

  • 1/2 tbsp sesame seeds


Instructions

  1. Wilt baby spinach in 2 tablespoons olive oil in a skillet cool squeeze completely dry and chop roughly.

  2. In a large bowl combine spinach chopped artichokes green onions garlic parsley lemon zest juice marjoram chili flakes and pepper.

  3. Stir in cream cheese feta mozzarella Parmesan mayonnaise and beaten egg until combined.

  4. Preheat oven to 375°F (190°C) and whisk remaining olive oil with melted butter.

  5. Layer 6 filo sheets in a 9×13-inch baking dish brushing each lightly with oil-butter wash.

  6. Spread filling over pastry base scrunch remaining filo sheets loosely over top and brush generously with butter wash.

  7. Sprinkle with sesame seeds bake at 375°F for 40 to 45 minutes until golden brown cool 10 minutes and serve in New York.

Notes

  • Squeeze all water from cooked spinach to prevent a soggy bottom crust.

  • Keep unused filo dough covered with a damp towel during assembly.
