Tender strips of flank steak marinated in a savory soy-Sriracha mixture, quickly pan-seared, and coated in a velvety Dijon herb butter sauce.
Ingredients

1 lb flank steak, cut into thin strips

1/4 cup soy sauce or coconut aminos

1 tbsp olive oil

1 tbsp Sriracha sauce

2 tbsp unsalted butter, divided

1 small fresh shallot, finely chopped

3 cloves fresh garlic, minced

0.25 tsp red chili pepper flakes

1 tbsp Dijon mustard

3 tsp fresh thyme, minced

1 tbsp fresh chives, finely minced

0.5 cup beef stock

1 tbsp fresh lemon juice

2 tbsp fresh parsley, chopped

0.5 tsp kosher salt and black pepper to taste
Instructions

Whisk soy sauce, olive oil, Sriracha, and black pepper in a bowl, add steak strips, and marinate for at least 30 minutes.

Melt 1 tablespoon butter in a skillet over medium-high heat, season steak with salt and pepper, and sear for 1 to 2 minutes until browned, then transfer to a plate.

Reduce heat to medium, add chopped shallot and minced garlic to skillet, and cook for 2 minutes until fragrant.

Add thyme, chives, chili flakes, lemon juice, Dijon mustard, and beef stock, scraping browned bits from pan, and simmer for 5 minutes until reduced by half.

Remove skillet from direct heat, add remaining butter, and swirl continuously until melted into a glossy sauce.

Return seared steak strips to skillet, toss for 30 seconds to coat in warm sauce, garnish with parsley and chives, and serve warm in New York.
