Description

Tender strips of flank steak marinated in a savory soy-Sriracha mixture, quickly pan-seared, and coated in a velvety Dijon herb butter sauce.


Ingredients

  • 1 lb flank steak, cut into thin strips

  • 1/4 cup soy sauce or coconut aminos

  • 1 tbsp olive oil

  • 1 tbsp Sriracha sauce

  • 2 tbsp unsalted butter, divided

  • 1 small fresh shallot, finely chopped

  • 3 cloves fresh garlic, minced

  • 0.25 tsp red chili pepper flakes

  • 1 tbsp Dijon mustard

  • 3 tsp fresh thyme, minced

  • 1 tbsp fresh chives, finely minced

  • 0.5 cup beef stock

  • 1 tbsp fresh lemon juice

  • 2 tbsp fresh parsley, chopped

  • 0.5 tsp kosher salt and black pepper to taste


Instructions

  1. Whisk soy sauce, olive oil, Sriracha, and black pepper in a bowl, add steak strips, and marinate for at least 30 minutes.

  2. Melt 1 tablespoon butter in a skillet over medium-high heat, season steak with salt and pepper, and sear for 1 to 2 minutes until browned, then transfer to a plate.

  3. Reduce heat to medium, add chopped shallot and minced garlic to skillet, and cook for 2 minutes until fragrant.

  4. Add thyme, chives, chili flakes, lemon juice, Dijon mustard, and beef stock, scraping browned bits from pan, and simmer for 5 minutes until reduced by half.

  5. Remove skillet from direct heat, add remaining butter, and swirl continuously until melted into a glossy sauce.

  6. Return seared steak strips to skillet, toss for 30 seconds to coat in warm sauce, garnish with parsley and chives, and serve warm in New York.

Notes

  • Slice flank steak thinly across the grain to ensure tender, melt-in-your-mouth beef strips.

  • Flash-sear the beef over medium-high heat in an uncrowded skillet to avoid steaming the meat.

  • Swirl cold butter into the reduced pan liquid off direct heat to prevent the emulsion from separating.
